Ingredients
Filling
- 1 Tbsp Butter
- 1 cup Corn Kernels boiled
- 1/2 cup Bell Peppers yellow, red, and/or green, finely diced
- 1 Tbsp All-Purpose Flour maida
- 1/2 cup Milk
- 1 cube Cheese grated, processed
- 1 1/2 tsp Salt or to taste
- 1 pinch Pepper black
- 1 pinch Oregano dried
- 1 Tbsp Tomato Sauce
- 1 tsp Chili Sauce
Assembly
- 16 Biscuit salted
- 1 cup Chickpea Noodle crispy chickpea noodles, or masala sev
- 1/2 cup Tomato Sauce for dipping
Garnish (Optional)
- 2 Tbsp Cheese grated, processed
- 1/4 cup Coriander Leaves chopped, fresh
Instructions
- In a medium nonstick pan, melt the butter over medium heat. Add the corn kernels and diced bell peppers. Season with a pinch of salt. Sauté for 2 minutes until slightly softened.
- Sprinkle the all-purpose flour over the vegetables and stir well to coat. This helps to create a light thickening effect for the filling.
- Pour in the milk and bring to a simmer. Stir in the grated processed cheese, salt, pepper, and oregano. Continue to cook, stirring frequently, until the mixture thickens to a dough-like consistency. This will take about 5-7 minutes.
- Stir in the tomato sauce and chili sauce. Mix well and cook for another minute. Remove the pan from the heat and let the filling cool to room temperature.
- Once the filling is cool enough to handle, divide it into 16 equal portions. Roll each portion into a smooth ball.
- Take two biscuits and sandwich a filling ball between them. Gently press the biscuits together to seal the filling inside.
- Pour the tomato sauce into a shallow dish. Pour the sev into another shallow dish. Dip each biscuit bite into the tomato sauce, then coat it evenly with sev.
- Arrange the cheesy biscuit bites on a serving platter. Garnish with grated cheese and chopped coriander leaves, if desired.
Recipe Notes
Good To Know
- For an extra burst of Indian flavor, add a pinch of chaat masala or a sprinkle of finely chopped fresh coriander to the dough before baking.
- If you want a tangier bite, mix in a teaspoon of finely chopped pickled jalapeños or green chilies with the corn.
- To make these bites ahead of time, shape the dough and freeze the unbaked pieces on a tray; when ready to serve, bake straight from the freezer, adding 2-3 minutes to the baking time.
- For a gluten-free version, swap the all-purpose flour with a blend of rice flour and chickpea flour (besan).
Expert Tips
- Don't overmix the dough, as this can make the corn bites tough. Mix just until the ingredients are combined.
- For even baking, ensure the corn bites are roughly the same size.
- If using frozen corn, thaw it completely and pat it dry before adding it to the dough to prevent excess moisture.
Storage Instructions
- Store leftover corn bites in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 4 days.
- Reheat in a preheated oven at 350°F (175°C) for 5-7 minutes, or until warmed through.
