Ingredients
For the Paneer Jalebi
- 100 gm Cottage Cheese fresh paneer, grated
- 1/8 cup All-Purpose Flour
- 1/8 cup Semolina fine semolina
- 1/4 cup Milk
- 2 cup Sugar for syrup
- 1 cup Water for syrup
- 1/2 cup Ghee for frying jalebis
For the Ice Cream Sandwich
- 200 ml Vanilla Ice Cream
For Garnishing
- 1/4 cup Chocolate Vermicelli
- 12 Pistachios chopped
Instructions
Prepare the Paneer Jalebi Batter
- Grate the paneer. In a bowl, combine the grated paneer, all-purpose flour, semolina, and milk. Mix well until you achieve a smooth, lump-free batter.
Make the Sugar Syrup
- In a saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar dissolves completely. Bring to a simmer and cook for about 5-7 minutes, or until a light syrup forms.
Fry the Jalebis
- Heat the ghee or oil in a non-stick pan or kadai over medium-low heat. Transfer the batter to a piping bag or zip-top bag with a corner snipped off. Pipe the batter into the hot oil, creating circular or spiral shapes. Fry until golden brown and crispy, flipping as needed.
Soak in Syrup
- Remove the fried jalebis from the oil and immediately dip them into the warm sugar syrup for about 2 minutes. This will help them absorb the syrup and become even more delicious.
Assemble the Ice Cream Sandwiches
- Allow the jalebis to cool completely. Once cooled, scoop vanilla ice cream onto one jalebi. Top with another jalebi to create a sandwich.
Freeze
- Wrap the ice cream sandwiches tightly in cling film or plastic wrap and freeze for at least 2 hours, or until the ice cream is firm.
Garnish and Serve
- Remove the ice cream sandwiches from the freezer a few minutes before serving. Garnish with chocolate vermicelli and chopped pistachios. Serve immediately and enjoy!
Recipe Notes
Expert Tips for the Perfect Paneer Jalebi Ice Cream Sandwich:
- For extra crispy jalebis, ensure your oil is hot enough before frying. Test by dropping a small amount of batter – it should sizzle immediately.
- Don't overcrowd the pan while frying the jalebis. Work in batches to maintain a consistent oil temperature and achieve even browning.
- If your sugar syrup becomes too thick, add a tablespoon of water at a time until you reach your desired consistency.
- For an even more decadent treat, consider using a premium vanilla bean ice cream or adding a swirl of your favorite flavor, like cardamom or rose.
