Ingredients
For the Kulfi Base
- 1 ltr Milk
- 1/2 cup Sugar adjust to your sweetness preference
- 1/4 tsp Cardamom Powder elaichi; freshly ground is best
- 1/8 tsp Saffron Threads kesar; steep in 1 tablespoon warm milk for 10 minutes to enhance color and flavor
For the Paneer & Almond Mixture
- 1/2 cup Cottage Cheese indian cottage cheese; crumbled
- 1/3 cup Almonds blanched and coarsely ground
For Garnish
- 1-2 Rose Petals for decoration
Instructions
Prepare the Saffron Infusion
- Steep saffron threads in 1 tablespoon of warm milk for 10 minutes to release their color and aroma.
Reduce the Milk
- In a heavy-bottomed pan, bring the milk to a boil over medium heat. Reduce heat to low and simmer, stirring occasionally, until the milk reduces to about one-third of its original volume (approximately 30-40 minutes). This will take time. Be patient.
Add Spices and Sweetener
- Stir in the sugar and cardamom powder. Add the saffron milk and stir well to combine. Continue simmering for another 5 minutes.
Incorporate Paneer and Almonds
- Remove from heat and stir in the crumbled paneer and ground almonds. Use an immersion blender to briefly pulse the mixture (about 10 seconds) to create a smooth yet slightly textured consistency. Do not over-blend.
Cool and Freeze
- Transfer the mixture to a bowl and let it cool completely to room temperature. Pour into kulfi molds (or small containers) and freeze for at least 6-8 hours, or until solid.
Serve and Enjoy
- Once frozen, run the kulfi molds under warm water for a few seconds to loosen. Serve immediately, garnished with rose petals.
