Instructions

Prepare the Saffron Infusion

  • Steep saffron threads in 1 tablespoon of warm milk for 10 minutes to release their color and aroma.

Reduce the Milk

  • In a heavy-bottomed pan, bring the milk to a boil over medium heat. Reduce heat to low and simmer, stirring occasionally, until the milk reduces to about one-third of its original volume (approximately 30-40 minutes). This will take time. Be patient.

Add Spices and Sweetener

  • Stir in the sugar and cardamom powder. Add the saffron milk and stir well to combine. Continue simmering for another 5 minutes.

Incorporate Paneer and Almonds

  • Remove from heat and stir in the crumbled paneer and ground almonds. Use an immersion blender to briefly pulse the mixture (about 10 seconds) to create a smooth yet slightly textured consistency. Do not over-blend.

Cool and Freeze

  • Transfer the mixture to a bowl and let it cool completely to room temperature. Pour into kulfi molds (or small containers) and freeze for at least 6-8 hours, or until solid.

Serve and Enjoy

  • Once frozen, run the kulfi molds under warm water for a few seconds to loosen. Serve immediately, garnished with rose petals.

Recipe Notes

Expert Tips for the Perfect Paneer Kesar Kulfi

  • For an even creamier texture, use full-fat milk.
  • If you don't have kulfi molds, you can use small paper cups or ramekins.
  • To prevent ice crystals from forming, avoid repeatedly opening and closing the freezer during the freezing process.
  • Feel free to experiment with other nuts like pistachios or cashews for added flavor and texture.
