Ingredients
For the Spinach Filling

- 3 cup Whole Wheat Flour whole
- 1.5 tsp Salt or to taste
- 1.5 tsp Garam Masala
- 1.5 tsp Amchoor Powder dry mango powder
- 3/4 tsp Chili Powder adjust to taste, red
- 1/2 cup Water add more as needed to make a soft dough, approximately
Instructions
Prepare the Spinach Filling
- Blanch the chopped spinach in boiling water for 2-3 minutes. Drain well and allow to cool slightly. Puree the spinach with ginger and green chilies in a blender until smooth.
Make the Dough
- In a large bowl, combine whole wheat flour, salt, garam masala, amchoor powder, and red chili powder. Gradually add the spinach puree and enough water to form a soft, pliable dough. Knead for 5-7 minutes until smooth and elastic. Cover and let rest for at least 30 minutes.
Assemble and Cook the Parathas
- Divide the dough into small, equal-sized balls. Roll each ball into a thin circle (about 6 inches in diameter). Spread a small amount of butter or ghee on half of each circle. Sprinkle with a pinch of salt and red chili powder (optional). Fold the other half over to create a semi-circle. Gently press the edges to seal. Roll this semi-circle again into a slightly thinner, oblong shape.
Cook on the Tawa
- Heat a tawa or griddle over medium heat. Cook the parathas for 2-3 minutes per side, or until golden brown and cooked through. Add a little oil or ghee to the pan during cooking to ensure even cooking and crispness. Press gently with a spatula to ensure even cooking.

- Serve the Palak Parathas hot with your favorite pickle, yogurt, or chutney.
