Ingredients
For the Spinach Puree
- 10 oz Spinach about 2 cups packed; thoroughly washed, fresh
For the Dough
- 2 cup Whole Wheat Flour atta, whole
- 1 tsp Mango Powder amchur powder, dry
- 1/2 tsp Asafoetida hing
- 1 tsp Cumin jeera, ground
- 2 Chilies finely chopped, green
- 2 clove Garlic minced
- 1.5 tsp Salt or to taste
- 2 tbsp Ghee clarified butter; plus extra for cooking
- 1/2 - 3/4 cup Water as needed for dough consistency
For Serving
- Yogurt chutney, or any desired accompaniment, or pickle
Instructions
Prepare the Spinach Puree
- Wash spinach thoroughly. Blanch in boiling water for 2 minutes, then immediately plunge into ice water to stop cooking. Squeeze out excess water and puree until smooth.
Make the Dough
- In a large bowl, combine whole wheat flour, dry mango powder, asafoetida, ground cumin, green chilies, garlic, salt, and ghee. Mix well.
- Gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth. Cover and let rest for 15 minutes.
Shape and Roll the Parathas
- Divide the dough into 8-10 equal portions. Roll each portion into a 3-inch circle.
- Spread a thin layer of ghee on each circle. Sprinkle with a little flour. Fold in half, then in half again to form a triangle.
- Roll out the triangle into a 6-7 inch circle.
Cook the Parathas
- Heat a non-stick griddle or tava over medium heat. Drizzle a little ghee on the surface.
- Place the rolled paratha on the hot griddle. Cook for 1-2 minutes per side, or until golden brown and puffed up, applying more ghee as needed. Use a spatula to press gently to ensure even cooking.
Serve
- Serve hot Palak Parathas immediately with yogurt, pickle, chutney, or your favorite Indian curry.
