Prepare the Spinach Puree

  • Blanch the spinach leaves by boiling them in salted water for a couple of minutes. Immediately plunge into ice water to preserve the vibrant green color. Squeeze out excess water and finely chop. In a blender, combine the chopped spinach, green chilies, garlic, coriander powder, cumin powder, garam masala, and salt. Blend into a smooth paste.

Make the Dough

  • In a large bowl, combine the whole wheat flour and carom seeds. Gradually add the spinach puree and water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth and elastic. Let the dough rest for at least 15 minutes.

Roll and Cook the Parathas

  • Divide the dough into small, equal-sized balls. Roll each ball into a thin circle using a little dry flour to prevent sticking. Heat a griddle or tawa over medium heat. Place a rolled paratha on the hot griddle and cook for about 1 minute per side.

Finish Cooking

  • Apply a little ghee or oil to one side, flip and cook for another minute. Repeat on the other side. Cook until golden brown and slightly crispy. Serve hot with yogurt or your favorite chutney.
