Instructions

Prepare the Paan Filling

  • Mix the dried paan mixture and gulkand thoroughly until well combined.

Temper the Chocolate

  • Fill a large bowl with warm water. Place a smaller heatproof bowl inside. Add the chocolate chunks to the smaller bowl and melt gently, stirring occasionally, ensuring the temperature remains between 31-32°C (88-90°F). Avoid boiling.

Prepare the Molds

  • Line your workspace with butter paper. Place silicone molds on top of the butter paper.

First Chocolate Layer

  • Pour the tempered chocolate into the molds, ensuring even coating. Invert the molds onto the butter paper to remove excess chocolate. Refrigerate for 10 minutes to set.

Add Paan Filling

  • Remove the molds from the refrigerator. Fill each mold with the paan mixture, leaving some space for the top layer of chocolate.

Final Chocolate Layer

  • Pour tempered chocolate over the paan mixture. Refrigerate for another 10 minutes to set completely.

Unmold and Store

  • Gently remove the paan chocolates from the molds. Wrap individually in parchment paper or foil and store in the refrigerator for up to 7-10 days.

Recipe Notes

Expert Tips

  • Choose your chocolate wisely: Opt for high-quality dark chocolate (70% cocoa or higher) for the best flavor and texture. The higher percentage of cocoa solids will enhance the paan's unique flavor profile.
  • Master the art of tempering: Properly tempered chocolate will create a glossy, smooth finish and prevent the chocolate from seizing. Invest in a thermometer to ensure accurate temperature control.
  • Don't overfill the molds: Leave some space at the top of each mold to allow for the final layer of chocolate and prevent spillage.
  • Get creative with your paan mixture: Experiment with different types of paan mixtures or add other complementary spices like cardamom or nutmeg for an extra layer of flavor complexity.
