Ingredients
- 1 cup Appam Batter ready-to-cook; you can also use your homemade recipe
- 1 cup Jaggery grated or finely chopped
- 1/4 cup Water to dissolve jaggery; adjust as needed for desired consistency
- 1.5 tsp Salt
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 2 tbsp Gulkand rose petal preserve
- 1 tsp Fennel Seeds
- 1/4 cup Desiccated Coconut grated fresh coconut can also be used
- 1 Betel Leaves finely chopped; fresh betel leaves recommended
- 1 tbsp Gulkand for topping, extra
- 1 tbsp Pistachios chopped, for garnish
Instructions
Prepare the Jaggery Syrup
- Dissolve the jaggery in 1/4 cup of warm water until a smooth syrup forms.
Combine Wet Ingredients
- In a large bowl, gently combine the appam batter, jaggery syrup, salt, baking powder, and baking soda. Let the mixture rest for 5 minutes.
Prepare the Paan Filling
- In a separate bowl, mix together the gulkand, fennel seeds, desiccated coconut, and finely chopped betel leaves.
Bake the Cupcakes
- Preheat your oven to 180°C (350°F). Grease or line a muffin tin with silicone cupcake liners. Fill the liners about halfway with the appam batter. Sprinkle some of the paan filling over the top of each cupcake.
- Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Garnish
- Let the cupcakes cool slightly in the tin before transferring them to a wire rack to cool completely. Once cooled, garnish each cupcake with a small spoonful of the remaining paan filling and, optionally, chopped pistachios or a drizzle of extra gulkand.
