- In a bowl, combine the gulkand, shredded coconut, and mukhwas. Mix thoroughly until well combined.
- Roll the mixture into bite-sized balls.
- Insert half a pitted date or one candied cherry into the center of each ball. Seal the filling completely within the mixture. The gulkand will help it stick together.
- Refrigerate the Paan balls for at least 30 minutes to firm up.
- Finely chop the dark chocolate. Place half of the chopped chocolate in a microwave-safe bowl.
- Microwave the chocolate in 30-second intervals, stirring after each interval, until melted and smooth. This gradual heating prevents scorching.
- Add the remaining chopped chocolate to the melted chocolate. Stir continuously until all the chocolate is melted and the mixture is smooth and glossy. This process, called tempering, gives the chocolate a professional sheen and prevents it from melting easily at room temperature.
- Dip each chilled Paan ball into the tempered chocolate, ensuring it's fully coated.
- Place the coated pops on a clean plate or parchment-lined tray.
- If desired, immediately sprinkle with sugar sprinkles before the chocolate sets.
- Refrigerate the Paan Pops for another 10 minutes to allow the chocolate to set completely.

I m fan of this recipe because you have really innovated gulkand which is a cooling traditional food for us but kids never love it as its sticky but when given as chocolate nothing will beat it.
