Ingredients
Grains & Legumes
- 3/4 cup Rolled Oats old-fashioned oats are best for this recipe.
- 1/4 cup Mung Bean also known as split yellow mung beans., yellow
Aromatics & Spices
- 1 tbsp Olive Oil
- 1/2 tsp Mustard Seeds rai
- 1/2 tsp Cumin Seeds jeera
- 1/4 tsp Asafoetida hing (optional, adds a unique flavor)
- 2 sprigs Curry Leaves
- 1 inch Ginger finely chopped
- 3 clove Garlic finely chopped
Vegetables
Spices & Seasoning
- 1/4 tsp Turmeric Powder haldi
- 1/4 tsp Chili Powder red
- 1.5 tsp Salt or to taste
Liquid
- 3 cup Water
Garnish
- 1 tbsp Coriander for garnish
Instructions
Prepare the Dal and Oats
- Rinse the moong dal and oats separately. In a pot, combine the moong dal with 2 1/2 cups of water. Bring to a boil, then reduce heat and simmer until the dal is about 3/4 cooked. Add the oats and continue to simmer.
Sauté the Aromatics
- While the dal and oats cook, heat the olive oil in a separate pan over medium heat. Add the mustard seeds and cumin seeds. Once they begin to splutter, add the asafoetida (if using), curry leaves, ginger, garlic, and green chilies. Sauté for about 30 seconds until fragrant.
Cook the Vegetables
- Add the chopped onion and sauté for 1-2 minutes until softened. Then, add the chopped tomato and cook until it softens, about 3-4 minutes. Stir in the turmeric powder, red chili powder, and salt.
Combine and Simmer
- Add the remaining 1/2 cup of water to the vegetable mixture and cook for 5 minutes. Add the cooked dal and oat mixture to the pan and stir well to combine. Simmer for a couple of minutes, allowing the flavors to meld.
Garnish and Serve
- Remove from heat and garnish with fresh coriander leaves. Serve hot.
