Ingredients
For the Moong Dal Fritters
- 2 cup Moong Dal green, split
- 1 cup Water for blending
- 1 tsp Salt or to taste
- 1 tsp Ginger-Garlic Paste
- 1 tsp Asafoetida
- 1/2 tsp Turmeric powder
For the Tempering
- 2 tbsp Oil
- 1 tbsp Cumin Seeds
- 1/2 cup Onion finely chopped
- 1 tbsp Chili Powder red
- 1 tbsp Coriander ground
- 2 cup Tomatoes finely chopped
- 2 tsp Mango Powder amchur, dry
- 1 tbsp Lemon Juice
- 1 tsp Garam Masala
For the Garnish
- 1/2 cup Coriander Leaves chopped, fresh
Instructions
- Soak the split green gram (moong dal) in water for 4-6 hours. Drain and rinse the dal. Blend the soaked dal with 1 cup of fresh water until smooth.
- Heat 1 teaspoon of oil in a non-stick pan. Add salt, ginger-garlic paste, asafoetida, and turmeric powder. Sauté for a minute until fragrant.
- Add the blended dal mixture to the pan and cook, stirring continuously, until it thickens to a halwa-like consistency. This ensures the fritters hold their shape. Remove from heat and let the mixture cool completely.
- Divide the cooled dal mixture into equal portions and shape them into small balls or fritters.
- Heat the remaining oil in a wok or large pan. Add cumin seeds and let them splutter. Sauté the chopped onions until translucent.
- Add red chili powder and ground coriander to the pan. Cook for 2 minutes, allowing the spices to bloom.
- Add the chopped tomatoes and cook until they soften and the oil starts to separate. This creates a rich and flavorful base for the fritters.
- Gently add the prepared moong dal fritters to the pan and mix well with the spiced tomato mixture. Cook for a few minutes, allowing the fritters to absorb the flavors.
- Add lemon juice, dry mango powder, and garam masala. Stir for another 2 minutes to combine all the flavors.
- Garnish with fresh coriander leaves. Serve the hot, crispy moong dal fritters with tea or as a snack.
