Ingredients
Dry Ingredients
- ½ cup Whole Wheat Flour whole
- ½ cup Ragi Flour
- ½ cup Jowar Flour
- ¼ cup Flaxseeds ground
- ¼ cup Fox Nut fox nuts, ground
Instructions
- Dry roast the flaxseeds until fragrant. This enhances their nutty flavor. Grind the roasted flaxseeds into a powder and set aside.
- Similarly, dry roast the makhana (fox nuts) until crisp. Grind them into a powder and set aside.
- In a dry pan, roast the whole wheat flour, ragi flour, and jowar flour until lightly golden. Roasting the flours removes any raw taste and improves their aroma.
- Add the desi ghee to the roasted flours. Ghee adds richness and helps bind the laddoos.
- Stir in the ground flaxseeds, ground makhana, freshly grated coconut, crushed cardamom, and jaggery. Combine all ingredients thoroughly.
- If the mixture feels too dry, add a little coconut milk or coconut water, one tablespoon at a time, until it comes together. The mixture should be moist enough to hold its shape when rolled.
- Take a handful of the mixture and shape it into round laddoos. You can adjust the size according to your preference.
- Gently press chopped nuts onto the laddoos for added texture and flavor. These nutritious laddoos can be stored in an airtight container at room temperature for up to a month.
Recipe Notes
Expert Tips
- For a richer flavor, use full-fat coconut milk.
- Adjust the amount of sugar to your preference, depending on the sweetness of the mangoes.
- If you don't have fresh mangoes, you can use frozen mango chunks. Just make sure to thaw them completely before blending.
Storage Instructions
- Store leftover mango lassi in an airtight container in the refrigerator for up to 3 days.
- Give it a good stir before serving as some separation may occur.
