Ingredients
Sweet Potato Mixture
- 2 cup Potato boiled and mashed; about 2 medium-sized sweet potatoes, sweet
- 3/4 cup Sugar adjust to your sweetness preference; granulated or powdered sugar works well
- 1/2 tsp Cardamom Powder
- 1/4 cup Ghee
Instructions
Prepare the Sweet Potato
- Heat the ghee in a non-stick pan over medium heat. Add the mashed sweet potato and sauté for 12-15 minutes, stirring frequently, until slightly softened and any excess moisture evaporates.
Combine Ingredients
- Add the sugar, cardamom powder, grated coconut, chopped almonds, cashews, and raisins to the pan. Mix well to combine all ingredients thoroughly.
Cook and Shape the Laddoo
- Continue stirring the mixture until it comes together as a cohesive mass and is slightly firm enough to hold its shape. This should take around 5-7 minutes.
Form and Garnish
- Remove the pan from heat. Allow the mixture to cool slightly (it should still be warm). Once warm, roll the mixture into small, round balls (laddoos). Roll each ladoo in the reserved 1 tablespoon of grated coconut.
Chill and Serve
- Place the finished laddoo in the refrigerator for at least 10-15 minutes to firm up. Serve chilled and enjoy!
