  • 1/4 cup Water more may be needed to adjust consistency
  • 1 small Onion finely chopped
  • 1 Chili finely chopped, green, or to taste
  • 1/4 cup Cabbage finely chopped
  • 1/4 cup Coriander fresh, also known as coriander, chopped

  • 2 tbsp Oil for cooking

Instructions
 

Prepare the Flaxseed and Oat Mixture

  • Dry roast the flax seeds in a pan over medium heat for 2-3 minutes, until fragrant. Let cool completely, then grind into a powder using a blender or food processor. Repeat with rolled oats.

Make the Batter

  • In a large bowl, whisk together the ground flaxseed, ground oats, rice flour, all-purpose flour, and salt. Add the yogurt, water, onion, green chili, cabbage, and cilantro. Mix until a smooth batter forms; add more water if needed to reach desired consistency. Let the batter rest for 10-15 minutes.

Cook the Pancakes

  • Heat the oil in a non-stick pan or griddle over medium heat. Pour 1/4 cup of batter onto the hot surface for each pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip carefully when bubbles begin to form on the surface.
