  • Soak the amaranth seeds in water for 4-5 hours. This softens them for grinding.
    Spicy Indian fish cutlets with cilantro, lemon, and spice powders on a metal tray.
  • Boil the potato and taro root until tender. Peel and mash them thoroughly.
  • In a blender or food processor, combine the soaked amaranth, peanuts, green chilies, cilantro, and rock salt. Blend into a smooth paste.

  • In a mixing bowl, combine the mashed potato, mashed taro root, and the amaranth paste. Mix well.

  • Gradually add the water chestnut flour to the mixture, kneading until a soft dough forms. The flour acts as a binding agent.
    Crispy fried fish served on a banana leaf, perfect for seafood lovers and traditional cuisines.
  • Divide the dough into small portions. Roll each portion into a thin circle using a rolling pin or by hand, traditionally with a banana leaf.
  • Heat a flat griddle or tawa over medium heat. Spread a little ghee on the hot surface.

  • Place the rolled paratha on the griddle and cook for a minute or two per side, or until golden brown spots appear. Flip and cook the other side, adding more ghee as needed.
