Ingredients
 

Amaranth Preparation

  • 1 cup Amaranth also known as rajgira or ramdana. use popped amaranth.

Dairy & Sweetener

  • 2 cup Milk
  • 1/4 cup Sugar adjust to your sweetness preference

Nuts & Spices

Garnish

  • Rose Petals or chopped pistachios, for garnish
  • 2 tbsp Milk for saffron soaking

Instructions
 

Popping the Amaranth

  • First, pop the amaranth. Heat a pan over medium heat and add 2-3 tablespoons of amaranth at a time. It will pop almost immediately. Remove the popped amaranth from the pan and set aside. Repeat until all amaranth is popped.

Soaking Saffron

  • Soak the saffron strands in 2 tablespoons of milk. Set aside to infuse.

Cooking the Kheer

  • In a heavy-bottomed pan, bring the full-fat milk to a boil over medium heat. Reduce heat to low, add the popped amaranth, and stir gently to combine. Simmer for 10 minutes, stirring occasionally.

Adding Flavor & Nuts

  • Add the chopped nuts (almonds, cashews, raisins), cardamom powder, and the saffron milk mixture to the kheer. Simmer for another 5 minutes, stirring gently. Turn off the heat.

Cooling and Serving

  • Allow the kheer to cool completely. Garnish with rose petals or chopped pistachios before serving chilled.
