Ingredients
Sago Preparation
- 1 cup Sago Pearls also known as sabudana; soak in water for 4-5 hours until soft and puffed
Vegetables & Spices
Garnish & Flavor Enhancers
- 1/4 cup Peanuts roasted
- 1/2 cup Pomegranate Kernels
- 1 tbsp Lemon Juice
Cooking Oil
- 1 tbsp Oil vegetable or coconut oil
Instructions
Prepare the Sago
- Soak sago pearls in water for 4-5 hours, or until soft and puffed.
- Drain all water thoroughly; ensure the sago is dry to prevent clumping.
Sauté Vegetables and Peanuts
- Heat oil in a non-stick pan over medium heat. Add peanuts and roast until golden brown.
- Add the chopped potatoes, tomatoes, and green chilies. Sauté until softened, about 5-7 minutes.
Combine and Finish
- Add the drained sago to the pan along with the sendha namak (or regular salt) and coriander (if using). Stir gently to combine.
- Remove from heat immediately. Stir in lemon juice and pomegranate kernels. Mix carefully.
Serve
- Serve your Sago Khichdi warm or at room temperature. It's delicious on its own and makes a complete meal!
