Ingredients
Dal and Vegetables
- 1 cup Mung Bean roasted, yellow
- 1 cup Bottle Gourd finely chopped

- 2 tsp Cumin Paste
- 2 tbsp Tomato Paste
- 1.5 tsp Salt or to taste
- 1-2 Chiles green, sliced
Tempering (Tadka)
- 2 tbsp Ghee
- 1 tsp Cumin Seeds
- 2 Chiles dried, red, whole
- 1 tsp Kashmiri Chili Powder
For Cooking the Dal
- 2 tbsp Mustard Oil
- 2 Bay Leaves
Instructions
- Dry roast the moong dal in a preheated pan with mustard oil until light brown. This enhances the nutty flavor of the dal. Set the roasted dal aside.
- In the same pan, heat the mustard oil. Add the bay leaves, followed by the roasted moong dal, ginger paste, turmeric powder, cumin paste, tomato paste, chopped bottle gourd, salt, and sliced green chiles. Sauté for a few minutes until fragrant.
- Add enough water to cover the dal and vegetables. Bring to a boil, then reduce heat and simmer until the dal and bottle gourd are tender. This will take approximately 20-25 minutes.
- While the dal simmers, prepare the tempering. Heat ghee in a separate small pan. Add the cumin seeds and dried red chiles. Once the cumin seeds splutter, add the Kashmiri chili powder. Be careful not to burn the spices.
- Pour the tempering over the cooked dal. Stir gently to combine. The tempering adds a final layer of rich aroma and flavor to the dish.
