Ingredients
 

Grains & Lentils

  • 1 cup Rice brown
  • 1/2 cup Mung Bean split yellow pigeon peas; also known as moong dal, yellow

Vegetables

Spices & Aromatics

Other Ingredients

  • 2 tbsp Cashews broken pieces
  • 3 tbsp Ghee clarified butter; desi ghee
  • 4 tbsp Oil vegetable oil or ghee
  • 1.5 tsp Salt or to taste
  • 5 cup Water
  • leaves Coriander chopped, for garnish

Instructions
 

Prepare the Rice and Dal

  • Wash the brown rice and moong dal thoroughly. Soak them together in water for at least 30 minutes, or up to 45 minutes.

Sauté the Aromatics

  • Heat the oil and ghee in a pressure cooker or heavy-bottomed pot over medium heat. Add the fennel seeds, cloves, cinnamon stick, and bay leaf. Sauté for a few seconds until fragrant.

Add Cashews and Onions

  • Add the broken cashews and sauté for a few seconds until lightly golden. Add the sliced onions and sauté until translucent.

Add Spices and Vegetables

  • Add the green chilies and ginger-garlic paste. Sauté for about 30 seconds until fragrant. Add the diced tomatoes and sauté until slightly softened. Add the chopped carrots, potatoes, and green beans. Stir in the turmeric powder, red chili powder, coriander powder, black pepper powder, and cumin seeds. Saute for 30 seconds.

Simmer the Khichdi

  • Pour in 5 cups of water and add salt to taste. Bring the mixture to a boil. Drain the soaked rice and lentils and add them to the pot. Stir well, allow it to come to a boil, then immediately reduce heat and cover tightly.

Pressure Cook

  • If using a pressure cooker, cook for one whistle, then reduce heat and simmer for 8 minutes. If using a regular pot, reduce heat and simmer, partially covered, for 20-25 minutes, or until the rice and lentils are tender and the liquid has been mostly absorbed.

Garnish and Serve

  • Once the pressure is released (or the khichdi is cooked), gently fluff the khichdi with a fork. Garnish with chopped fresh coriander leaves. Serve hot. Enjoy!
