Ingredients

- 1 cup Mung Bean split yellow lentils; rinse thoroughly, yellow
- 250 grams Bottle Gourd and cubed, lauki, peeled, seeded
- 1/2 cup Tomato Paste
Fats & Liquids
- 2 tbsp Mustard Oil
- 2 tbsp Clarified Butter clarified butter, desi ghee
- Water as needed Water enough to cook the dal and bottle gourd
Seasoning
- 1.5 tsp Salt or to taste
Instructions
Preparing the Dal
- Wash the moong dal thoroughly. Heat mustard oil in a pan and shallow fry the dal with a pinch of turmeric powder until lightly browned. Set aside.
Cooking the Bottle Gourd and Dal
- Cut the bottle gourd into 1-inch cubes. In a pressure cooker, combine the fried dal, bottle gourd cubes, turmeric powder, and salt. Add enough water to comfortably cover the ingredients. Pressure cook for 2 whistles or until the bottle gourd is tender.
Sautéing the Aromatics
- While the dal is cooking, heat 2 tablespoons of mustard oil in a small pan. Add the whole red chilies and fry until fragrant. Set aside.
Combining the Flavors
- In the pressure cooker, add the fried red chilies, bay leaves, ginger paste, tomato paste, and chopped green chilies. Stir well and cook for a few minutes to blend the flavors.
Finishing Touches
- In a small pan, heat ghee and cumin seeds until fragrant. Pour this tempering over the cooked dal and gently stir. Cover and let it simmer for a couple of minutes to allow the flavors to meld.
