Sweet Potatoes

  • 6 medium Potato boiled until tender, sweet, sweet potatoes

Coating and Seasoning

  • 1/2 cup Arrowroot Powder also known as arrarot
  • 2 tsp Pepper black, freshly ground, preferred
  • 1 tsp Salt or to taste, rock salt

Prepare the Sweet Potatoes

  • Boil the sweet potatoes until tender. Allow them to cool completely.

Cut and Coat the Fries

  • Cut the boiled sweet potatoes into french fry shapes.
  • In a bowl, toss the sweet potato fries with arrowroot powder, black pepper, and sendha namak until evenly coated.

Fry the Fries

  • Heat the desi ghee in a non-stick pan over medium heat.
  • Carefully add the coated fries to the pan, ensuring not to overcrowd it.
  • Fry the fries, flipping occasionally, until they are golden brown and crispy on all sides. This will take about 8-10 minutes, depending on your stovetop.

Serve

  • Remove the fries from the pan and place them on a paper towel-lined plate to drain any excess ghee.
