Prepare the Papdi

  • Make a dough using water chestnut flour and mashed potatoes. Add water gradually until you achieve a smooth, pliable dough. Roll out small, thin circles and fry them in sesame seed oil until golden brown and crispy.

Prepare the Banana Chips

  • Thinly slice the raw bananas and fry them in sesame seed oil until golden and crispy.

Prepare the Jaggery Chutney

  • Boil jaggery with water until it dissolves. Add red chili powder, salt, and raisins. Simmer until it thickens into a chutney.

Assemble the Chaat

  • Layer fried papdi, then add a few pieces of boiled and diced potato. Repeat the layers. Add salt and red chili powder as per taste. Drizzle with jaggery chutney and top with hung curd, lemon juice, chopped green chilies, and coriander leaves.

Garnish and Serve

  • Garnish with pomegranate seeds, banana chips, and potato chips. Serve immediately and enjoy!
