Base Ingredients

  • 1 1/2 cup Quinoa
  • 1 cup Dates packed, pitted
  • 1 cup Almonds coarsely chopped (cashews or pistachios can be substituted), roasted, unsalted
  • 1/4 cup Honey maple syrup or agave nectar may be substituted
  • 1/4 cup Peanut Butter natural or homemade is preferred; almond butter or other nut butters may be substituted

  • Process the pitted dates in a food processor until finely chopped and a dough-like consistency is achieved. This should take approximately 1 minute. The dates should form a ball.
  • Dry roast the quinoa in a non-stick pan over medium heat. Toast for a few minutes until the quinoa turns a light brown color. Be careful not to burn the quinoa.
  • In a large bowl, combine the toasted quinoa, chopped almonds, and processed dates.
  • In a small saucepan, gently warm the honey and peanut butter over low heat. Stir until melted and smooth. Pour the honey-peanut butter mixture over the quinoa mixture.
  • Mix thoroughly, breaking up any large clumps of dates to ensure even distribution. Add any optional ingredients, such as chocolate chips or dried fruit, and mix again.
  • Line an 8x8 inch baking dish (or a small loaf pan for thicker bars) with parchment paper. This will make it easier to remove the bars later. Transfer the mixture to the prepared dish and press down firmly to create a uniform layer.
  • Cover the dish with parchment paper or plastic wrap. Refrigerate or freeze for 15-20 minutes to allow the bars to harden. Once firm, remove from the pan and cut into even-sized bars.
