  • 1 cup Almond blanched, or roasted, raw
  • 1 cup Date medjool dates recommended, pitted
  • 3 tablespoons Chocolate 70% cacao or higher, dark, melted

Prepare the Truffle Mixture

  • Put the almonds, pitted dates, and melted dark chocolate into a food processor.
  • Process until a sticky, well-combined dough forms. Add 1-2 tablespoons more melted chocolate if needed to reach desired consistency.

Chill the Mixture

  • Transfer the truffle mixture to a bowl and refrigerate for at least 15 minutes to firm up. This makes rolling much easier.

Shape and Coat the Truffles

  • Remove the chilled mixture from the refrigerator. Using a small spoon or cookie scoop, scoop out portions of the mixture.
  • Roll each portion into a small ball (approximately 1/2 inch in diameter).
  • Place the cocoa powder in a shallow dish.
  • Roll each truffle ball in the cocoa powder to coat evenly.
