Ingredients
Nuts & Seeds
- 1/2 cup Almonds chopped
- 1/2 cup Pistachios chopped
- 1/2 cup Cashews chopped
- 1/2 cup Walnuts chopped
- 2 tbsp Poppy Seeds
- 2 tbsp Sesame Seeds
Binders & Sweetener

- 1/4 tsp Salt enhances the flavors of the nuts and seeds.
- 1 tsp Vanilla Extract adds a hint of sweetness and flavor.
Instructions
Prepare the Seeds
- Dry roast the poppy seeds and sesame seeds in a dry pan over medium heat for 2-3 minutes, or until fragrant. Set aside to cool.
Combine Ingredients
- Combine the chopped nuts, dates (or date paste), honey (if using), and optional salt and vanilla extract in a food processor. Process until a sticky, well-combined mixture forms. This may take several minutes. If using whole dates, process in batches if needed for optimal blending.
Shape and Roll the Bars
- Line an 8x8 inch baking dish with parchment paper, leaving an overhang on the sides to help lift out the finished bars. Press the nut mixture firmly and evenly into the prepared dish.
Coat and Chill
- Sprinkle the roasted poppy and sesame seeds evenly over the top of the nut mixture. Use the parchment paper overhang to lift the mixture from the dish and tightly roll it into a log. Alternatively, cut the mixture into bars directly in the baking dish.
- Refrigerate for at least 2 hours, or until firm. This allows the bars to set properly.
Slice and Serve
- Once chilled, remove the bars from the refrigerator. Using a sharp knife, cut the log into even slices or simply cut the mixture into bars from the baking dish. Serve and enjoy!
