Ingredients
 

Wet Ingredients

  • 4 Bananas medium to large, ripe or overripe (approximately 300g or 0.66 lbs)
  • 1/2 cup Vegetable Oil any neutral-flavored cooking oil will work.
  • 1/2 cup Sugar organic unrefined or regular granulated sugar., granulated
  • 1 tsp Vanilla Extract

Dry Ingredients

Optional Add-ins

  • 1/2 cup Walnuts chopped; or other nuts, chocolate chips, etc., raisins

Instructions
 

Preheat & Prep

  • Preheat oven to 350°F (180°C). Grease and flour a 9x5 inch loaf pan or two 8-inch round cake pans.

Mash Bananas

  • Peel and mash the bananas in a large bowl using a fork or potato masher until mostly smooth.

Combine Wet Ingredients

  • Add the oil, sugar, and vanilla extract to the mashed bananas. Stir until well combined and the sugar is mostly dissolved.

Combine Dry Ingredients

  • In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.

Combine Wet and Dry

  • Gradually add the dry ingredients to the wet ingredients, folding gently until just combined. Do not overmix.

Add Mix-ins (Optional)

  • Stir in the chopped walnuts (or other mix-ins) until evenly distributed.

Bake

  • Pour the batter into the prepared pan(s). Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, tent it loosely with foil.

Cool & Serve

  • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve.
