Ingredients
Wet Ingredients
- 4 Bananas medium to large, ripe or overripe (approximately 300g or 0.66 lbs)
- 1/2 cup Vegetable Oil any neutral-flavored cooking oil will work.
- 1/2 cup Sugar organic unrefined or regular granulated sugar., granulated
- 1 tsp Vanilla Extract
Dry Ingredients
- 1 1/2 cup Whole Wheat Flour whole
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
Optional Add-ins
- 1/2 cup Walnuts chopped; or other nuts, chocolate chips, etc., raisins
Instructions
Preheat & Prep
- Preheat oven to 350°F (180°C). Grease and flour a 9x5 inch loaf pan or two 8-inch round cake pans.
Mash Bananas
- Peel and mash the bananas in a large bowl using a fork or potato masher until mostly smooth.
Combine Wet Ingredients
- Add the oil, sugar, and vanilla extract to the mashed bananas. Stir until well combined and the sugar is mostly dissolved.
Combine Dry Ingredients
- In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.
Combine Wet and Dry
- Gradually add the dry ingredients to the wet ingredients, folding gently until just combined. Do not overmix.
Add Mix-ins (Optional)
- Stir in the chopped walnuts (or other mix-ins) until evenly distributed.
Bake
- Pour the batter into the prepared pan(s). Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, tent it loosely with foil.
Cool & Serve
