Ingredients

- 4 Bananas overripe, medium-sized; mashed
- 1/2 cup Jaggery can substitute with 1/2 cup granulated white sugar or brown sugar
- 2/3 cup Oil neutral-flavored oil like rice bran or sunflower oil
- 1 tsp Vanilla Extract
Dry Ingredients
- 1.5 cup Whole Wheat Flour approximately 375ml, whole
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt fine sea salt or himalayan pink salt
Optional Add-ins
- 1/4 cup Walnuts chopped; can substitute with sunflower seeds or other nuts/seeds
Instructions
Preheat & Prep
- Preheat oven to 180°C (350°F). Peel and mash the overripe bananas until smooth using a fork, blender, or potato masher.
Combine Wet Ingredients
- In a large bowl, combine the mashed bananas, jaggery, oil, and vanilla extract. Mix well until a smooth paste forms.
Combine Dry Ingredients
- In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.
Combine Wet and Dry
- Gently fold the dry ingredients into the wet ingredients using a circular motion. Be careful not to overmix.
Add Mix-ins
- Stir in the chopped walnuts (or your chosen nuts/seeds).
Bake the Cake
- Grease a 9-inch round baking pan with oil. Pour the batter into the prepared pan and tap gently to remove air bubbles.
Baking & Cooling
