Ingredients
Wet Ingredients
- 2 Banana medium, very ripe; mashed
- 1/4 cup Vegetable Oil
- 2 tbsp Yogurt thick
- 1 tsp Vanilla Extract
Dry Ingredients
- 1/2 cup Sugar granulated
- 2 tbsp Sugar brown, light
- 1 1/2 cup All-Purpose Flour also known as maida
- 1/2 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1/2 tsp Cinnamon ground, optional
Optional Mix-ins
- 1/2 cup Walnuts chopped
- 1/2 cup Chocolate Chips
Instructions
Preheat & Prep
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
Mash Bananas & Combine Wet Ingredients
- In a large bowl, mash the ripe bananas until smooth. Add the oil, yogurt, and vanilla extract. Mix well to combine.
Combine Sugars & Wet Ingredients
- Stir in the granulated sugar and light brown sugar. Mix until well combined.
Combine Dry Ingredients
- In a separate bowl, whisk together the flour, baking soda, baking powder, and cinnamon (if using).
Combine Wet & Dry Ingredients
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Add Mix-ins (Optional)
- Fold in the chopped walnuts and chocolate chips (if using).
Fill Muffin Liners
- Divide the batter evenly among the prepared muffin liners, filling each about 2/3 full.
Bake the Muffins
