Ingredients
Cake Ingredients
- 200 gm All-Purpose Flour
- 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Cinnamon ground
- 1/4 tsp Salt
- 2 Bananas ripe
- 100 gm Butter unsalted
- 140 gm Sugar powdered
- 2 Large Eggs
- 1 tsp Vanilla Extract
- 130 ml Yogurt
Frosting Ingredients
- 1/4 cup Butter unsalted
- 2 cup Sugar powdered
- 1 tsp Lemon Juice fresh
- 1 tsp Cinnamon ground
Instructions
- Cream together the butter and powdered sugar until light and fluffy. This incorporates air for a tender cake.
- Beat in the eggs one at a time, mixing well after each addition.
- In a separate bowl, mash the ripe bananas.
- Add the mashed bananas to the wet ingredients and mix until just combined.
- In another bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, and salt. This ensures the leavening agents are evenly distributed for a consistent rise.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, which can lead to a tough cake.
- Gently fold in the yogurt and vanilla extract.
- Preheat oven to 175°C (350°F). Grease and flour a baking pan. This prevents the cake from sticking.
- Pour the batter into the prepared pan and bake for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
- While the cake is baking, prepare the frosting. Beat the butter until smooth and creamy. Gradually add the powdered sugar, lemon juice, and cinnamon, beating until light and fluffy.
- Once the cake is cool, frost the top and garnish with toasted walnuts and candied fruit.
Recipe Notes
Expert Tips
- For a richer flavor, use overripe bananas. They'll be sweeter and easier to mash.
- Don't overmix the batter. Overmixing can lead to a tough cake. Mix until just combined.
- Test for doneness by inserting a toothpick into the center. If it comes out clean, the cake is ready.
Storage Instructions
- Store leftover cake in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
