Instructions

  • Cream together the butter and powdered sugar until light and fluffy. This incorporates air for a tender cake.
  • Beat in the eggs one at a time, mixing well after each addition.
  • In a separate bowl, mash the ripe bananas.
  • Add the mashed bananas to the wet ingredients and mix until just combined.
  • In another bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, and salt. This ensures the leavening agents are evenly distributed for a consistent rise.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, which can lead to a tough cake.
  • Gently fold in the yogurt and vanilla extract.
  • Preheat oven to 175°C (350°F). Grease and flour a baking pan. This prevents the cake from sticking.

Recipe Notes

Expert Tips

  • For a richer flavor, use overripe bananas. They'll be sweeter and easier to mash.
  • Don't overmix the batter. Overmixing can lead to a tough cake. Mix until just combined.
  • Test for doneness by inserting a toothpick into the center. If it comes out clean, the cake is ready.

Storage Instructions

  • Store leftover cake in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
