- 1/2 tsp Baking Soda

- 1/2 cup Vegetable Oil + 2 tablespoons
- 3/4 cup Sugar + 1-2 tablespoons, granulated, to taste
- 3/4 cup Yogurt + 2 tablespoons
- 2 tbsp Orange Juice freshly squeezed
- 1 1/2 cup Carrot finely grated
- 1/2 cup Walnuts finely chopped
- 1/4 cup Walnuts for decorating
Frosting Ingredients
- 4 ounce Cream Cheese softened
- 1 cup Sugar powdered
- 1 tbsp Orange Zest finely grated
- 1-2 tbsp Orange Juice as needed for consistency, freshly squeezed
- 2 Large Eggs
Instructions
Prepare the Cake
- Sift together the whole wheat flour, baking powder, baking soda, salt, and ginger (if using) three times.
- Dissolve the sugar in the yogurt.
- Add the oil to the yogurt mixture and mix well.
