For the Idlis:

For the Mexican Sauce:

  • 1 tbsp Olive Oil or use extra virgin olive oil for serving
  • 1 medium Onion finely chopped
  • 1 medium Onion sliced
  • 3.5 clove Garlic minced
  • 2 medium Tomatoes finely chopped or use 1/2 cup tomato puree or your favorite mexican tomato sauce
  • 1/2 Bell Peppers also known as bell pepper; sliced
  • 1/2 Bell Peppers red, sliced
  • 1/2 Bell Peppers sliced, yellow
  • 1 tbsp Vinegar white
  • 1 tbsp Wine any dry red wine will work, red
  • 2.5 leaves Basil chopped, fresh
  • 1 tbsp Oregano dried
  • 1 tbsp Pepper Flakes adjust to your spice preference, red
  • Kosher Salt to taste

Instructions
 

Prepare the Idli Batter

  • Combine rolled oats, semolina, buttermilk, yogurt, water, and baking soda in a large bowl. Mix thoroughly until a thick batter forms. Let the batter rest in a warm place for 15-20 minutes.

Tempering for the Idlis

  • Heat olive oil in a small pan. Add mustard seeds, curry leaves, cashews, and green chilies. Sauté until the seeds crackle and the cashews are lightly browned. Stir this tempering into the idli batter.

Steam the Idlis

  • Grease mini idli molds with oil. Pour the batter into the molds, filling them about three-quarters full. Steam for 15 minutes, or until the idlis are cooked through and firm.

Make the Mexican Sauce

  • Heat olive oil in a pan. Add minced garlic and sauté for 1 minute, being careful not to brown the garlic. Add the finely chopped onion and sauté until softened but still slightly crunchy. Add the chopped tomatoes and salt; cook until the tomatoes soften.
  • Stir in red pepper flakes. Add the sliced bell peppers and onion; sauté for 5-7 minutes until slightly tender-crisp.
  • Increase the heat and add vinegar and red wine. Let it simmer briefly to reduce slightly.
  • Stir in the chopped basil. Gently add the steamed idlis to the sauce, coating them evenly.

Garnish and Serve

  • Garnish with dried oregano and a drizzle of extra virgin olive oil. Serve hot.

Recipe Notes

Expert Tips

  • For extra fluffy idlis, let the batter ferment for a longer time (up to 30 minutes).
  • Adjust the amount of green chilies and red pepper flakes according to your preferred spice level.
  • If you don't have an idli steamer, you can use a regular steamer basket over a pot of boiling water.
  • Feel free to experiment with different vegetables in the Mexican sauce. Adding corn, zucchini, or mushrooms would be delicious!
