Ingredients
For the Chicken
- 2 lb Chicken Breasts
For the Mole Sauce
- 1 Large Onion
- 1 tbsp Ginger-Garlic Paste
- 1/2 cup Bell Peppers finely chopped, red
- 1/2 cup Bell Peppers finely chopped, yellow
- 1 cup Chocolate chopped, dark
- 1 tbsp Mint Leaves fresh, or 1 teaspoon mint paste
- Salt to taste
- 1 tsp Chili Powder red
- 1 tsp Chicken Masala Powder
- 1 tsp Garam Masala
- 1/4 tsp Turmeric Powder
- 1 tsp Pepper black, ground
- 1 1/2 cups Chicken Broth
- 1 tsp Cumin Seeds
- 5 tbsp Vegetable Oil
Instructions
Prepare the Chicken
- Season chicken breasts with salt and shallow fry in 2 tablespoons of heated oil until cooked through. Set aside.
Make the Mole Sauce
- Heat remaining oil in a large pan. Add onion and saute for 3 minutes over low heat.
- Add ginger-garlic paste and saute for another 3 minutes.
- Add red and yellow bell peppers, salt, chicken masala, red chili powder, garam masala, turmeric, and black pepper. Mix well and cook for 3-5 minutes.
- Pour in chicken broth and simmer until the oil separates and floats on the surface.
- Stir in chopped dark chocolate until melted. Remove from heat and let cool to room temperature.
- Blend the cooled mixture into a smooth puree using an immersion blender or regular blender.
Final Steps
- Heat 1 tablespoon of oil in a pan. Add cumin seeds and saute until fragrant.
- Add finely chopped red and yellow bell peppers and saute for 2 minutes over high heat.
