Prepare the Chicken

  • Season chicken breasts with salt and shallow fry in 2 tablespoons of heated oil until cooked through. Set aside.

Make the Mole Sauce

  • Heat remaining oil in a large pan. Add onion and saute for 3 minutes over low heat.
  • Add ginger-garlic paste and saute for another 3 minutes.
  • Add red and yellow bell peppers, salt, chicken masala, red chili powder, garam masala, turmeric, and black pepper. Mix well and cook for 3-5 minutes.
  • Pour in chicken broth and simmer until the oil separates and floats on the surface.
  • Stir in chopped dark chocolate until melted. Remove from heat and let cool to room temperature.
  • Blend the cooled mixture into a smooth puree using an immersion blender or regular blender.

Final Steps

  • Heat 1 tablespoon of oil in a pan. Add cumin seeds and saute until fragrant.
  • Add finely chopped red and yellow bell peppers and saute for 2 minutes over high heat.
  • Add the mole puree and simmer for 1 minute over low heat.
  • Stir in mint and mix well.
  • Add the fried chicken breasts to the sauce. Cover and cook for 5 minutes over low heat.
