Ingredients
Dough
- 250 gm Cream Cheese plain
- 100 gm Butter unsalted
- 1/2 cup Sugar granulated, plus extra for sprinkling
- 1/2 tsp Lemon Zest
- 1 tsp Vanilla Extract
- 2 cup All-Purpose Flour
- 1 tsp Baking Soda
- 1/4 tsp Salt
Filling and Assembly
- 1/2 cup Strawberry Jam or any jam of your choice
- 1 tbsp Butter for greasing the baking tray, unsalted
Instructions
- In a large bowl, whip the cream cheese with a spatula until smooth. This helps create a light and airy texture.
- Add the softened unsalted butter and continue to whip until the mixture is light and creamy.
- Gradually add the granulated sugar, whipping until combined. Be careful not to over-sweeten, as the jam will add extra sweetness.
- Stir in the lemon zest and vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. The dough may be slightly sticky.
- Wrap the dough tightly in plastic wrap and refrigerate for at least 20 minutes. Chilling helps prevent the cookies from spreading too much during baking.
- Preheat oven to 350°F (175°C). Grease a baking tray with butter.
- On a lightly floured surface, roll out the chilled dough to about 1/4 inch thickness.
- Use cookie cutters to cut out circles for the bottom layer and rings (or smaller circles with a hole in the center) for the top layer.
- Place the cookies onto the prepared baking tray.
