Ingredients
 

Cookies

Chocolate Glaze

  • 1 cup Sugar also known as confectioners' sugar, powdered
  • 2 tsp Milk
  • 2 tsp Corn Syrup or honey, light
  • 1/4 tsp Vanilla Extract
  • 1-2 tsp Food Coloring gel food coloring is recommended for vibrant color; choose your favorite colors

Instructions
 

Prepare the Dry Ingredients

  • Sift together the all-purpose flour, unsweetened cocoa powder, baking powder, salt, and espresso powder (if using). Set aside.

Cream Butter and Sugar

  • In a large bowl, cream together the softened butter and granulated sugar using a hand mixer until light, fluffy, and creamy (about 3 minutes).

Add Eggs and Vanilla

  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Combine Wet and Dry Ingredients

  • Gradually add the dry ingredients to the wet ingredients in three additions, mixing until just combined. Be careful not to overmix.

Chill the Dough

  • Turn the dough out onto a lightly floured surface and gently bring together. Form into a disc, wrap tightly in plastic wrap, and chill in the refrigerator for at least 1 hour.

Preheat Oven and Prepare Baking Sheet

  • Preheat your oven to 350°F (180°C). Line baking sheets with parchment paper.

Roll, Cut, and Bake Cookies

  • On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness. Use cookie cutters or a knife to cut out your desired shapes. Place the cookies onto the prepared baking sheets.
  • Bake for 8-10 minutes, rotating the baking sheets halfway through, until the edges are set.

Cool the Cookies

  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Make the Chocolate Glaze

  • In a small bowl, whisk together the powdered sugar, milk, corn syrup (or honey), and vanilla extract until smooth. Divide the glaze into separate bowls and add a few drops of food coloring to each bowl to create different colors.

Decorate the Cookies

  • Transfer the glaze to a piping bag (or a zip-top bag with a corner snipped off) and decorate the cooled cookies as desired. Allow each color to set slightly before adding another color.
