Ingredients
Dry Ingredients
- 1 cup All-Purpose Flour maida
- 1/4 cup Almond Flour
- 2 tsp Coffee Powder instant
- 2 tsp Cocoa Powder mocha or dark cocoa powder, unsweetened
- 1/8 tsp Baking Powder
- 1/4 tsp Baking Soda
Wet Ingredients
- 1/3 cup Butter softened to room temperature, unsalted
- 1/2 cup Packed Sugar brown, light
- 1 large Egg
- 1 tsp Vanilla Extract optional, enhances flavor
Instructions
Prepare the Oven and Ingredients
- Preheat your oven to 400°F (200°C). Ensure your butter is softened to room temperature for optimal mixing.
Combine Dry Ingredients
- In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, instant coffee powder, and cocoa powder. Set aside.
Cream Butter and Sugar
- In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the egg and vanilla extract (if using) until well combined.
Combine Wet and Dry Ingredients
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Rest the Dough
- Cover the bowl and let the dough rest for 10-15 minutes. This allows the gluten to relax, resulting in a more tender cookie.
Shape and Bake
- Line a baking sheet with parchment paper. Roll the dough into small balls (about 1 inch in diameter). Flatten slightly with a fork. Leave some space between each cookie.
Bake the Cookies
- Bake for 10-12 minutes, or until the edges are lightly golden brown. Keep an eye on them to prevent burning.
Cool and Enjoy
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy!
Recipe Notes
Expert Tips for Perfect Mocha Coffee Cookies
- For a more intense coffee flavor, use freshly brewed strong coffee, cooled, instead of instant coffee powder. Adjust the amount accordingly to taste.
- If your dough seems too dry, add a tablespoon of milk at a time until it reaches the desired consistency.
- Chill the dough for 30 minutes before baking for even chewier cookies.
- Experiment with different types of chocolate; dark chocolate or milk chocolate can add a unique twist.
