Mashed potato and egg bhurji is a simple and easy recipe idle for breakfast or brunch or can have as a side dish for lunch or dinner. It is prepared with boiled potatoes which are mashed then mixed with eggs and fried with simple spice and ingredients.

  • 2 Potato boil3d and mashed
  • 2 Eggs beaten
  • 1 large Onion chopped
  • 1 large Tomato chopped
  • 2-3 Green Chillies chopped
  • 1/2 tsp Cumin Seed
  • 1-2 Spring Onion green chopped
  • 2-3 tbsp Oil
  • 1-2 tsp Salt or as per taste


  • In a mixing bowl add the mashed potatoes and beaten eggs and mix well.
  • Heat oil in a pan. Add cumin seeds and let it splutter.
  • Add the onion, green chillies, tomatoes and saute for 2-3 mins.
  • Season with salt and add the potato egg mixture . Mix well and fry for about 7-8 mins .
  • Add chopped spring onions ,give a quick stir and take off the heat.
