Egg Bhurji

A simple and spicy egg bhurji or scrambled eggs flavoured with basil and onion seeds(kalonji).

  • Eggs -2
  • Tomato -1
  • Boiled Potato -1
  • Milk - 2 tbsp
  • Onion seeds kalonji - 1 tsp
  • Dried basil - 1 tsp
  • Turmeric powder - 1/4 tsp
  • Red chilli powder - 1/4 tsp
  • Green chillies -3
  • Salt
  • Oil - 3 tsp
  • Burger bun toasted with butter - To serve with it


  • Cut the tomato and boiled potato into small cubes.
  • Heat the oil in a kadai and add the kalonji and basil. Let it splutter.
  • Now add the tomato and potato cubes and cook for 2 minutes.
  • Add turmeric powder, green chillies, red chilli powder and salt. Mix well and cook for another 2 minutes.
  • Beat the eggs well and add the milk in it. Now add the eggs over the tomato potato mix.
  • Let it cook for 3 minutes and then scramble the eggs.
  • Cook for another 2 minutes and then turn off the stove. Garnish with coriander leaves.
  • Serve hot with toasted burger buns.
