  • At least 2-3 weeks in advance, combine the chopped dried fruits, nuts, and candied orange peel in an airtight container. Pour the dark rum over the fruit mixture. This soaking process allows the fruits to plump and absorb the rum's flavor, creating a moist and delicious fruitcake.

  • In a saucepan, combine the granulated sugar and 1 tablespoon of water. Cook over medium heat, stirring constantly, until the sugar melts and turns a rich amber color. Carefully pour in the remaining water—it will bubble vigorously. Return the pan to low heat and stir until the hardened caramel dissolves completely. Set aside to cool.
  • Preheat oven to 325°F (160°C). Grease and flour a 9-inch round cake pan or line it with parchment paper. This ensures the cake won't stick and releases cleanly after baking.
  • In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, instant coffee powder, salt, grated nutmeg, and ground spices (from the cinnamon stick, cloves, and cardamom pods).
  • In a separate bowl, cream together the vegetable oil and powdered sugar until light and fluffy. This creates a smooth base for the cake batter.

  • Beat in the yogurt until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated. Be careful not to overmix.
  • Drain the rum-soaked fruits, reserving the rum. Toss the fruits in a tablespoon of flour to prevent them from sinking to the bottom of the cake during baking. Gently fold the floured fruits into the batter.
  • In a small bowl, combine the warm milk and vinegar. Let it stand for a few minutes until slightly curdled. This buttermilk substitute adds moisture and tenderness to the cake. Stir in the baking soda, then quickly fold this mixture into the cake batter. The baking soda will react with the vinegar, creating air bubbles that help the cake rise.
  • Pour the batter into the prepared pan and bake for 55-60 minutes, or until a wooden skewer inserted into the center comes out clean. Oven temperatures vary, so start checking for doneness around the 55-minute mark.
  • As soon as the cake comes out of the oven, brush it with 2-3 tablespoons of the reserved rum. This adds extra moisture and flavor. Let the cake cool in the pan for 15 minutes before inverting it onto a wire rack to cool completely.
