Ingredients
Dry Ingredients
- 250 gm All-Purpose Flour
- 1 tsp Baking Soda
- 1 1/2 tsp Ginger ground
- 1 tsp Spice see notes for blend suggestions, mixed
Wet Ingredients
- 115 gm Butter unsalted
- 115 gm Sugar packed, brown
- 150 gm Golden Syrup
- 2 tbsp Molasses unsulphured, if possible
- 2 Large Eggs beaten
- 2 tbsp Milk
For Serving (Optional)
- Stem Ginger candied or in syrup, to taste
- Icing Sugar to taste
Instructions
- Preheat oven to 160°C (325°F). Grease and flour a 7-inch square or 8-inch round cake pan. This ensures the gingerbread releases cleanly after baking.
- In a large bowl, whisk together the all-purpose flour, baking soda, ground ginger, and mixed spice. Sifting helps combine the ingredients and aerate the mixture for a lighter texture.
- In a medium saucepan over low heat, combine the unsalted butter, brown sugar, and golden syrup. Stir constantly until the butter is melted and the sugar is dissolved.
- Remove the saucepan from the heat and let the mixture cool slightly, about 10 minutes. This prevents the eggs from curdling when added.
- Pour the cooled wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix, as this can make the gingerbread tough.
- Add the beaten eggs and molasses to the batter. Mix until everything is incorporated and the batter is smooth.
- Pour the batter into the prepared pan and gently tap it on the counter to remove any air bubbles. Bake for 60-75 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the gingerbread cool in the pan for 15 minutes before transferring it to a wire rack to cool completely. Cooling on a rack prevents the bottom of the cake from becoming soggy.
- For serving, dust the gingerbread with icing sugar and garnish with stem ginger, if desired.
Recipe Notes
Good To Know
- Unsulphured Molasses Substitute: Heat 1/2 cup powdered jaggery (dark if possible) with 2 tablespoons of water on low heat until a thick syrup forms. Strain and use.
- Golden Syrup Substitutes: Corn syrup or honey. Omit if unavailable.
- Homemade Mixed Spice: Combine 1 tablespoon each of ground allspice, cinnamon, and nutmeg; 2 teaspoons each of ground mace, cloves, coriander, and ginger. If allspice is unavailable, rely on the other spices, especially cinnamon.
- Stem Ginger Substitute: Finely chopped ginger candy.
- Baking Temperature: Maintain 160°C consistently.
- Maturation: Store for 15 days to 1 month in an airtight container for optimal flavor development.
- Moistening (Optional): Weekly, lightly moisten the cake with 1 tablespoon of brandy, rum, fruit syrup, or a mixture of 2 teaspoons of water and 1 tablespoon of honey. Avoid soaking.
- Decoration Options: Icing sugar, sugar icing, fondant, Christmas sprinkles, gold dust, or buttercream with ginger essence and chopped candied ginger.
Expert Tips
- For a deeper molasses flavor, use dark jaggery. Light jaggery will still work but provides a slightly different taste.
- Toasting the mixed spices briefly before grinding can enhance their aroma and flavor in the cake.
- If using candied ginger as a stem ginger substitute, chop it finely to ensure even distribution throughout the cake.
Storage Instructions
- Store the cake in an airtight container (Tupperware or glass) at room temperature for 15 days to 1 month for maturation and optimal flavor development.
