Ingredients
For the Lauki Thalipeeth
- 1/2 medium Bottle Gourd grated (approximately 1-1.5 cups), lauki
- 1 cup Gram Flour bengal gram flour, besan
- 1/2 cup Rice Flour
- 2 tbsp Semolina for added crispness, optional, rawa
- 1/4 cup Water or as needed to adjust dough consistency
- 10-12 Curry Leaves fresh, whole or lightly torn
- 2-3 Chili adjust to taste, finely chopped, green
- 1/2 tsp Turmeric haldi
- 1 tsp Cumin jeera
- 1.5 tsp Salt or to taste
For Cooking
- 2-3 tbsp Oil for cooking the thalipeeth, vegetable or refined
Instructions
Prepare the Bottle Gourd
- Peel and grate the bottle gourd. Lightly squeeze to remove excess moisture, but retain some moisture to help bind the dough.
Mix the Dough
- In a large mixing bowl, combine the grated bottle gourd, gram flour, rice flour, semolina (if using), green chilies, curry leaves, turmeric powder, cumin seeds, and salt. Mix well. Gradually add the reserved bottle gourd water or fresh water to form a soft, pliable dough. The dough should be slightly sticky but manageable.
Shape the Thalipeeth
- Lightly grease a surface with oil or use parchment paper. Take a small portion of the dough and gently roll it into a ½-inch thick disc. Make a small hole in the center of each disc to allow steam to escape during cooking.
Cook the Thalipeeth
- Heat a lightly oiled tawa or griddle over medium heat. Carefully place the thalipeeth discs onto the hot tawa. Cook for 2-3 minutes per side, or until golden brown and crispy. Add a little oil to the pan as needed to prevent sticking. Flip carefully once the bottom is cooked through.
