Instructions

Prepare the Vegetable Mixture

  • Grate the bottle gourd, cabbage, and carrot. Finely chop the spinach. Mash the boiled potato.
  • Combine all the grated and chopped vegetables in a large bowl. Add the mashed potato, roasted flour, ginger-garlic paste, salt, and chili flakes (if using).
  • Mix all the ingredients gently and thoroughly. The mixture should be firm enough to form balls; if it's too runny, add 1-2 tablespoons of extra flour.

Shape and Fry the Veggie Balls

  • Roll the mixture into small, even-sized balls. Work quickly as the vegetables release moisture.
  • Heat the oil in a deep frying pan or wok over medium-high heat.
  • Carefully add the vegetable balls to the hot oil, ensuring not to overcrowd the pan. Fry in batches if necessary.
  • Fry the balls until they are golden brown and crispy on all sides. This should take about 3-4 minutes per batch.

Serve and Enjoy

  • Remove the crispy veggie balls from the oil and place them on a paper towel-lined plate to drain excess oil.
  • Serve the hot Lauki Vegetable Balls immediately with your favorite chutney, dipping sauce, or yogurt.

Recipe Notes

Expert Tips for Perfect Lauki Vegetable Balls

  • Roasting the flour enhances its flavor: Toasting the flour for a few minutes in a pan over medium heat before adding it to the mixture brings out its nutty aroma and flavor, adding depth to the veggie balls.
  • Don't overmix the batter: Overmixing can lead to tough veggie balls. Gently combine all ingredients until just mixed.
  • Adjust the spices to your preference: Feel free to experiment with other spices like cumin powder, coriander powder, or garam masala to customize the flavor profile.
  • For a healthier option: Consider baking the veggie balls in a preheated oven at 375°F (190°C) for 20-25 minutes, or air frying them for a crispier, less oily result.
