Ingredients
Vegetables
- 1 cup Bottle Gourd grated, lauki
- 1 cup Cabbage grated
- 1 cup Spinach finely chopped
- 1 cup Carrot grated
- 1 Potato medium-sized, boiled and mashed
Spices & Binding
- 6 tbsp All-Purpose Flour roasted lightly in a pan until fragrant
- 1 tsp Ginger-Garlic Paste or 1 tsp ginger paste and 1 tsp garlic paste; can substitute with 1/2-1 tsp chili paste for spicier balls
- 1 1/2 tsp Salt adjust to taste
- 1/4 tsp Chili Flakes optional, for added heat
- 2 tbsp Oil for deep frying
Instructions
Prepare the Vegetable Mixture
- Grate the bottle gourd, cabbage, and carrot. Finely chop the spinach. Mash the boiled potato.
- Combine all the grated and chopped vegetables in a large bowl. Add the mashed potato, roasted flour, ginger-garlic paste, salt, and chili flakes (if using).
- Mix all the ingredients gently and thoroughly. The mixture should be firm enough to form balls; if it's too runny, add 1-2 tablespoons of extra flour.
Shape and Fry the Veggie Balls
- Roll the mixture into small, even-sized balls. Work quickly as the vegetables release moisture.
- Heat the oil in a deep frying pan or wok over medium-high heat.
- Carefully add the vegetable balls to the hot oil, ensuring not to overcrowd the pan. Fry in batches if necessary.
- Fry the balls until they are golden brown and crispy on all sides. This should take about 3-4 minutes per batch.
Serve and Enjoy
- Remove the crispy veggie balls from the oil and place them on a paper towel-lined plate to drain excess oil.
- Serve the hot Lauki Vegetable Balls immediately with your favorite chutney, dipping sauce, or yogurt.
Recipe Notes
Expert Tips for Perfect Lauki Vegetable Balls
- Roasting the flour enhances its flavor: Toasting the flour for a few minutes in a pan over medium heat before adding it to the mixture brings out its nutty aroma and flavor, adding depth to the veggie balls.
- Don't overmix the batter: Overmixing can lead to tough veggie balls. Gently combine all ingredients until just mixed.
- Adjust the spices to your preference: Feel free to experiment with other spices like cumin powder, coriander powder, or garam masala to customize the flavor profile.
- For a healthier option: Consider baking the veggie balls in a preheated oven at 375°F (190°C) for 20-25 minutes, or air frying them for a crispier, less oily result.
