Instructions

Prepare the Cucumber

  • Clean and peel the cucumber. Grate it using a coarse grater.

Make the Batter

  • In a large bowl, combine the grated cucumber, chana dal (or flour), rice flour, semolina (if using), salt, turmeric powder, cumin seeds, green chilies, and curry leaves. Mix thoroughly until well combined.

Cook the Thalipeeth

  • Heat a non-stick pan or griddle over medium heat. Add 1 tbsp of oil and spread it evenly.

Form and Cook

  • Drop about 3-4 tablespoons of the batter onto the hot pan for each thalipeeth. Spread it evenly to form thin, circular flatbreads.

Flip and Finish

  • Cook for 2-3 minutes on each side, or until golden brown and crispy. Add a little more oil around the edges to prevent sticking and promote even cooking. Flip carefully when the edges start to look set and the bottom is golden.

Serve

  • Serve the hot Kakadi Thalipeeth immediately with your favorite accompaniments, such as yogurt, chutney, or tomato sauce.

Recipe Notes

Expert Tips for the Perfect Kakadi Thalipeeth

  • Coarse is Key: Using coarse rice flour is crucial for that signature texture. If you only have fine rice flour, adding more semolina will help achieve the desired crispiness.
  • Don't Overmix: Gently combine the ingredients to avoid a tough thalipeeth. Overmixing develops gluten, resulting in a less desirable texture.
  • Adjust Spices: Feel free to adjust the amount of green chilies according to your spice preference. For a milder version, use fewer chilies or add a pinch of sugar to balance the heat.
  • Oil Control: Use just enough oil to prevent sticking, but avoid using too much, as it could make the thalipeeth greasy.
