  • Heat the mustard oil in a pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds to release their aroma. This technique, called blooming, enhances the spices' flavor.

  • Add the chopped garlic and green chilies to the pan. Sauté for about 30 seconds until fragrant, being careful not to burn them.
  • Add the grated cabbage and beetroot to the pan along with salt. Sauté for 5-7 minutes, or until the vegetables are slightly softened but still retain some texture.
