Prepare the Bottle Gourd

  • Peel and grate the bottle gourd (500g).

Combine Dry Ingredients

  • In a large bowl, combine the grated bottle gourd, rice flour (3 cups), cumin seeds (1 tsp), red chili powder (1 tsp), turmeric powder (1 tsp), coriander powder (1 tsp), and salt (1.5 tsp). If using garam masala, substitute it for the other spices.

Make the Dough

  • Mix all ingredients thoroughly. If the mixture is too wet, add more rice flour, a tablespoon at a time, until a workable dough forms.

Fry the Lauki Muth

  • Heat the oil (4 tbsp) in a shallow pan or wok over medium heat. Alternatively you may deep fry.

Shape and Fry

  • Roll small portions of the dough into balls and slightly flatten them in your palm. Gently place the flattened dough into the hot oil, ensuring not to overcrowd the pan.

Cook until Golden Brown

  • Fry the Lauki Muth, turning occasionally, until they are golden brown and crispy. Adjust the heat as needed to prevent burning. Remove the fried fritters and place them on a paper towel-lined plate to absorb excess oil.
