Ingredients
For the Kofta
- 1 Bottle Gourd about 1.5-2 lbs, large, lauki
- 1/2 cup Gram Flour besan
- 1 tsp Salt or to taste
- 1 tsp Chili Paste green
For the Gravy
- 2 tbsp Oil for frying and sautéing
- 1 tsp Cumin jeera
- 1 tbsp Ginger-Garlic Paste
- 2 tbsp Onion paste
- 1 tsp Chili Powder red
- 2 tsp Coriander dhania
- 2 tbsp Tomato Puree
- 1/4 cup Yogurt curd, plain, whisked
- 1/2 tsp Garam Masala
- 1 tbsp Garnishing fresh coriander leaves and cream (optional)
- 2 cup Water
Instructions
Prepare the Bottle Gourd
- Peel, wash, and grate the bottle gourd. Boil it with 1 cup of water for 5 minutes, then squeeze out excess water.
Make the Kofta
- In a bowl, combine the grated bottle gourd, gram flour, green chili paste, and salt. Mix well to form a slightly sticky dough. Roll the mixture into small, marble-sized balls.
Fry the Kofta
- Heat oil in a pan over medium heat. Carefully drop the koftas into the hot oil and fry until they are golden brown and crispy. Remove and set aside.
Prepare the Gravy
- In the same pan, add a little more oil if needed. Add cumin seeds and let them splutter. Add ginger-garlic paste and onion paste, and sauté until fragrant and the onions soften.
Add Spices
- Add red chili powder and coriander powder. Sauté for a minute, adding 1 tablespoon of water to prevent burning.
Simmer the Gravy
- Add tomato puree and the whisked yogurt. Cook until the oil starts to separate from the gravy. Add 2 cups of water, bring to a boil, and reduce heat to a simmer.
Combine and Finish
- Gently add the fried koftas to the gravy. Simmer for another 5 minutes, allowing the flavors to meld. Switch off the heat.
Garnish and Serve
- Garnish with garam masala, fresh coriander leaves, and a dollop of cream (optional). Serve hot with rice or roti.
