Ingredients
For the Lauki Kofta
- 1 Bottle Gourd lauki, medium-sized
- 1 cup Gram Flour besan
- 50 gm Cottage Cheese grated
- 1/2 tbsp Chili Powder red
- 1/2 cup Yogurt
- 1.5 tsp Salt or to taste
- 2 tbsp Vegetable Oil for frying
For the Curry
- 1/2 tbsp Cumin Seeds
- 1 Onion finely chopped, large
- 4 Tomatoes finely chopped, medium-sized
- 1-2 Chillies finely chopped (adjust to taste), green
- 1 tsp Peppercorns black, crushed
- 1 cup Water
- 1/2 tbsp Coriander Powder dhania
- 1 tbsp Turmeric Powder haldi
- 1/2 tbsp Garam Masala
- 1/2 cup Cream
- 1 cup Coriander chopped, for garnish
- 1 cup Cooking Oil for the curry
Instructions
Prepare the Bottle Gourd
- Grate the bottle gourd and steam it until tender. You can also pressure cook it for 2-3 whistles.
Make the Kofta Mixture
- Once cooled, squeeze out excess water from the steamed bottle gourd.
- In a bowl, combine the grated bottle gourd, chickpea flour, grated paneer, red chili powder, salt, and yogurt. Mix thoroughly to form a dough.
Fry the Koftas
- Shape the mixture into small, bite-sized koftas. Heat oil in a pan over medium heat. Gently fry the koftas until golden brown on all sides.
- Remove from heat and set aside.
Prepare the Curry
- Heat oil in a separate pan. Add cumin seeds and allow them to splutter.
- Add chopped onions and sauté until golden brown. Add the green chilies and crushed black peppercorns.
- Add the chopped tomatoes and cook until softened.
- Stir in the coriander powder, turmeric powder, and salt. Cook for a few minutes until fragrant.
- Pour in water and simmer for about 5 minutes.
Combine and Finish
- In a small bowl, gently whisk together the yogurt and milk cream.
- Add the yogurt mixture to the curry and stir well. Reduce heat to low.
- Add the fried koftas to the curry and simmer gently for 2-3 minutes to allow the flavors to meld.
- Garnish with fresh coriander leaves and grated paneer.
Serve
- Serve hot with rice or chapatis.

Expert Tips for the Best Lauki Kofta Curry
- For extra flavor, you can add a pinch of asafoetida (hing) along with the cumin seeds.
- Don't overcook the koftas, as they can become hard. Fry them until they are golden brown and cooked through.
