Broken Wheat & Liquids
- 1 cup Broken Wheat dalia
- 1.75 cup Water 1.25 cups for cooking, 1/2 cup for soaking raisins

- 3/4 cup Sugar
- 1 tsp Cardamom Powder elaichi

- 2 inch Cinnamon Stick

- 3/4 cup Ghee desi ghee preferred

- Soak the raisins in 1/2 cup of warm water for at least 15 minutes to plump them up.
Toast the Broken Wheat
- Heat the ghee in a heavy-bottomed pan over medium heat. Add the broken wheat and sauté, stirring frequently, until it turns a light golden brown color. This step enhances the flavor and texture.
Cook the Lapsi
- Add the remaining 1.25 cups of water to the pan. Bring to a boil, then reduce heat to low, cover, and simmer for approximately 20-25 minutes, or until the broken wheat is cooked through and most of the water has been absorbed. Stir occasionally to prevent sticking.
