  • In a heavy-bottomed pan or skillet, melt 1 tablespoon of ghee over medium heat. Add the almonds, cashews, and raisins. Sauté until lightly golden and fragrant, about 2-3 minutes. Set aside.
  • In the same pan, dry roast the broken wheat over medium heat. Stir frequently to prevent burning. Roast until the wheat turns a light golden brown and releases a nutty aroma, about 5-7 minutes. This enhances the flavor of the halwa.
  • Pour in the water and bring to a boil. Reduce heat to low, cover, and simmer for 3-5 minutes, or until the broken wheat is tender but not mushy.
  • In a separate heavy-bottomed saucepan, combine the sugar and just enough water to cover it. Cook over medium-high heat, without stirring, until the sugar melts and turns a deep amber caramel color. Be careful not to burn it.
  • Carefully pour the hot caramel into the cooked broken wheat mixture. Stir gently to combine. The caramel will bubble and harden initially, but it will melt as you continue to cook and stir.
  • Add the grated jaggery and the remaining 3 tablespoons of ghee. Stir continuously over low-medium heat until the jaggery melts and the halwa thickens, about 5-7 minutes. The halwa is ready when it starts to pull away from the sides of the pan.
  • Stir in the cardamom powder and toasted nuts and raisins. Mix well.
