Prepare the Broken Wheat

  • Pulse broken wheat in a blender until finely ground, but not into a powder.

Combine Batter Ingredients

  • In a bowl, combine the ground broken wheat, hung curd, salt, water, and chopped coriander. Mix thoroughly until well combined.

Make the Tempering

  • Heat oil or ghee in a small pan. Add mustard seeds and let them splutter. Add urad dal, asafoetida, and green chili. Sauté for about a minute until fragrant.

Combine and Steam

  • Pour the tempering over the idli batter and mix well. Add more water if needed to adjust the batter consistency. Stir in the baking soda.

Grease and Steam

  • Lightly grease an idli steamer plate with oil or ghee. Pour the batter into the molds, filling them about ¾ full.
  • Steam for 10-12 minutes over medium heat, or until the idlis are cooked through and firm.

Serve

  • Let the idlis cool for 5 minutes before carefully removing them from the steamer plate. Serve hot with your favorite chutney, sambar, or dal.
