Ingredients
Broken Wheat & Liquids
- 1 cup Broken Wheat dalia, samba broken wheat is preferred but any variety works
- 2 cup Milk
- 1 cup Water adjust as needed for desired consistency
Vegetables
Spices & Seasoning
- 1 tsp Turmeric haldi
- 1 tsp Chili Powder adjust to your spice preference, red
- 1 tsp Garam Masala
- 1/2 tsp Mustard Seeds rai
- 1/2 tsp Gram black, split, urad dal
- 4 tsp Clarified Butter
- 1 tbsp Fruits chopped raisins, cranberries, dried, or a mix. optional
- Salt to taste
Instructions
Prepare the Broken Wheat
- Dry roast the broken wheat in a pan over medium heat for 5-7 minutes, stirring frequently, until lightly browned and fragrant.
Sauté Aromatics and Vegetables
- Heat ghee in a pressure cooker or large pot. Add mustard seeds and urad dal. Once the seeds splutter, add the chopped onions and sauté until golden brown.
- Add the chopped tomatoes, carrots, and potatoes. Stir well and sauté for 2-3 minutes until slightly softened.
Add Spices and Cook
- Stir in turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for another 2-3 minutes.
Add Broken Wheat and Liquids
- Add the roasted broken wheat to the vegetable mixture. Pour in the milk and water. Mix well, ensuring all ingredients are combined.
Pressure Cook
- Close the lid and cook for 4-5 whistles (or until the broken wheat is cooked through). If using a pot, cover and simmer for 15-20 minutes, or until the broken wheat is tender.
